Commercial kitchen equipment is unforgiving of electrical guesswork. Ovens, fryers, warmers, refrigerators, ice machines, dishwashers, exhaust systems, and point-of-sale equipment may operate together during the busiest hours. A missing circuit, wrong voltage, or overloaded panel can delay a Jacksonville restaurant opening or interrupt service after the doors are open.
Build an exact equipment schedule
Start with the final make and model of every powered item. Record voltage, phase, rated load, connection type, plug configuration, disconnect requirements, controls, and installation location. Include refrigeration, cooking equipment, ventilation, dishwashing, water heating, beverage systems, lighting, signs, fire-suppression interfaces, POS, security, and cleaning equipment.

Confirm the building power matches the operation
Document the service size, voltage, phase, panels, transformers, tenant feeders, and available capacity. Empty breaker positions do not prove sufficient capacity. A qualified load evaluation should consider the complete facility and realistic operating demand.
If the space previously housed a restaurant, do not assume its electrical system fits the new concept. Menus, production volume, equipment technology, HVAC, and operating hours may be completely different.
Coordinate every trade from one plan
Kitchen equipment often requires electrical power, plumbing, gas, ventilation, fire suppression, controls, drainage, and manufacturer clearances. The electrician, equipment supplier, kitchen designer, mechanical contractor, plumber, fire-alarm provider, general contractor, landlord, and utility may all have connected responsibilities.
Create a responsibility matrix showing who supplies, installs, connects, starts, tests, and warrants each item. Confirm whether equipment arrives cord connected, hardwired, or needing a local disconnect. Identify control wiring and interlocks instead of discovering them during startup.
Protect critical refrigeration and food operations
Map walk-ins, freezers, coolers, ice machines, and monitoring systems to clearly labeled circuits and disconnects. Decide which loads require generator support, alarms, or an outage response plan. Staff should not have to guess which breaker controls critical inventory.
Repeated trips are not normal maintenance. They can indicate equipment failure, overload, damaged wiring, loose connections, moisture, or voltage problems. Do not increase breaker sizes or bypass protective devices to keep equipment running.
Design for heat, water, cleaning, and impact
Commercial kitchens expose electrical equipment to heat, grease, steam, condensation, cleaning chemicals, wash-downs, carts, and constant use. Devices, enclosures, wiring methods, and mounting locations must be appropriate for their environment and protected from physical damage.
Plan accessible disconnects and safe working space around panels. Keep temporary cords and adapters from becoming permanent infrastructure. Address roof leaks, clogged drains, and condensation before moisture reaches energized equipment.
Plan shutdowns, inspections, and startup
Renovations in an operating restaurant require careful scheduling. Identify refrigeration, alarms, internet, security, and other systems that must stay energized. Define shutdown windows, food protection, notifications, lockout responsibilities, and restoration checks.
Coordinate permits and inspections with construction milestones. Before opening, verify equipment voltage and rotation where applicable, test controls and interlocks, update panel directories, label disconnects, and confirm all trades have completed startup requirements.
Leave useful records for the operating team
Turn over equipment schedules, panel directories, one-line information when available, permits, test results, warranties, emergency contacts, and photographs of concealed work. Train managers on what they may safely observe and when to call qualified service providers.
